More than one-third (38%) of consumers overall consider fried fast foods their go-to comfort foods.1 Popular fried chicken sandwiches are evolving with international variations like Japanese katsu sando, in the early stages of menu introduction, and German schnitzel, now in the menu adoption phase.2
Perhaps consumer craving for fried food combined with trendy Korean comfort fare inspired <a href="https://shakeshack.com/blog/our-food/team-swicy-vs-team-umami-the-choice-is-yours#/" target="_blank">Shake Shack</a> to enter into 2024 with bold flavors via a Korean Style Fried Chicken sandwich. It featured crispy, white-meat chicken breast coated in a spicy and sweet Gochujang glaze, sprinkled with sesame seeds and topped with white kimchi slaw on a toasted potato bun. The limited-time offer also included a Korean BBQ Burger, Spicy Korean BBQ Fries and Spicy Korean BBQ Cheese Fries.
Indulge in Snacks
With the potential to increase profitability, tap into the coveted afternoon and evening snack dayparts. When consumers are in the mood for comfort food, 57% crave small snacks and drinks, according to a Datassential survey of 756 U.S. consumers. After dinner/late night is when 21% of those same consumers say they most crave comfort food.1
Fried chicken, chicken fingers and fries might be the most ubiquitous comfort snack options currently menued.2 Add new life with toppings, sauces and loaded versions.
In June 2024, Wendy&rsquo;s launched a line of Saucy Nuggs with Gen Z in mind, who the chain identifies as &ldquo;obsessed with chicken.&rdquo; 3 The fast food giant already offered comfort-centric chicken nuggets, but in a quest for the bolder flavors customers were asking for, it spent a few years developing seven sauces: honey bbq, garlic parm, buffalo, spicy honey bbq, spicy garlic parm, spicy buffalo and spicy ghost pepper. For snacking or a meal, the Saucy Nuggs are available in quantities of four, six, 10 or 20.3
Also in June, Dave&rsquo;s Hot Chicken targeted snack enthusiasts with the rollout of Dave&rsquo;s Bites. The crunchy nuggets come in three spice levels (no spice, medium and hot) as a 10-piece serving.4
Make it health-forward
Using and marketing notable healthful premium ingredients is a great way to draw attention to your comfort fare. Incorporate first-rate ingredients into staples like soups, stews, mac &amp; cheese and pot pies to create a distinctive edge over others in your segment.
Part of Boston Market&rsquo;s ethos and marketing message centers on quality and flavor. That includes the rotisserie chicken in its Chicken Pot Pie. Its <a href="https://www.bostonmarket.com/" target="_blank">website states</a>: &ldquo;We believe that you shouldn&rsquo;t have to compromise taste for health, which is why our chicken is not only delicious but also a healthier choice. Our rotisserie chicken is prepared without any added hormones, steroids, or antibiotics.&rdquo;
Consumers likely appreciate this. Weighing in on the poultry claims they think are most important, Clean Label ranks No. 1 (53%), followed by No Antibiotics Ever (50%), Humanely Raised (40%), Raised in the USA (40%) and Organic (38%), according to an online survey of 1,000 consumers representing the general population.5
Remember, to stay competitive and appealing to the evolving tastes of discriminating guests, continuously innovate your comfort food offerings. Incorporate international flavors, expand snack options and emphasize wholesome ingredients to drive traffic, sales and good will.

Kick Up the Comfort

John Manion never expected his loaded-fries version of the classic seafood tower to become a social media sensation. The chef/owner of <a href="https://www.elchechicago.com/" target="_blank">El Che Steakhouse &amp; Bar,</a> a South American-inspired hot spot in Chicago&rsquo;s West Loop neighborhood, was just having fun when he decided to do something impulsive for a group of friends who came in to dine.
They ordered mar de plata, a heaping assortment of fire-roasted seafood: seared scallops, head-on shrimp, oysters, and charred lobster tails drizzled with an ultra-rich lobster and crab Diavola butter sauce. As if that wasn&rsquo;t decadent enough, they asked for a side of the signature beef fat fries. Manion surprised them by bringing over the dish himself.
&ldquo;When I dropped the dish off at the table, I impulsively dumped the fries right on top and the crowd, as they say, went wild,&rdquo; Manion described.
&ldquo;About two days later, we saw a dramatic uptick in this dish being ordered, and the question everyone asked when it was delivered was &lsquo;Where are the fries?&rsquo;&rdquo; he continued. &ldquo;Apparently, someone at [my friends&rsquo;] table had taken a video of me dumping the fries onto the dish, and it went viral on TikTok. It's been one of our top-selling items ever since. Never underestimate the power of fried potatoes here in the Midwest.&rdquo;
That power gets an injection when fries are transformed into loaded fries, which have been growing 59% in the past four years on restaurant menus, according to Datassential.1 Loaded fries have been trialed by three-quarters of consumers and two-thirds of consumers have an affinity for them, said the leading food and beverage market research and intelligence firm. They are expected to grow another 29% in the next four years.2
Part of the appeal for consumers is new toppings and unconventional formats, which are areas of innovation for restaurants. That&rsquo;s what Manion discovered with increased sales of El Che&rsquo;s mar de plata, which he admitted wasn&rsquo;t selling as much until he added the loaded fries component. Other trending toppings across the country include beer cheese, pickled onion, brisket, grilled chicken, crema, chorizo, pepper jack, red onion, avocado, hot sauce, pesto and truffle oil.
American classics meet loaded fries
When Buffalo chicken wings unite with fries, they become Buffalo Chicken Fries. While the combo sounds simple enough, it hadn&rsquo;t been made official until a California man created the Buffalo Fries Franchise Restaurant and opened <a href="https://www.thebuffalospot.com/menu/" target="_blank">The Buffalo Spot</a> in Long Beach, California, in 2013. Ivan Flores&rsquo; concoction consists of a heaping of Buffalo chicken nuggets over fries with a special house-made sauce pulling them together. He now boasts more than 30 franchised locations in California, Arizona, Nevada and Texas.
Datassential reports that Buffalo chicken fries were up 86% in the past four years.&sup3; Even Burger King got in on the action in 2015 when the fast-food chain introduced a limited-time offer of breaded sticks of poultry with a dipping sauce. The dish can currently be found on the menu at <a href="https://www.victorygrillchicago.com/" target="_blank">Victory Grill,</a> a modernized Chicago diner specializing in burgers, shakes and a variety of loaded fries topped with all sorts of tasty ingredients. Additional fun takes on American classics are pizza sauce on fries (up 63%) and Philly Cheese Steak loaded fries (up 38%).4
At <a href="https://www.chick-fil-a.com/menu/chick-fil-a-waffle-potato-fries" target="_blank">Chick-fil-A</a>, Chicken Waffle Fries are one of the most requested items on the secret menu. Here, the dish is all savory, and part of the fun is that customers get to assemble it themselves. It consists of a 12-count nugget, large waffle fries, pepper jack cheese, Buffalo sauce, and a salad bowl. Guests are instructed to spread the waffle fries on the bottom of the bowl, then sprinkle nuggets and cheese on top, and finally finish with Buffalo sauce.
Loaded french fries&hellip;for dessert?
While chicken waffle-loaded fries are typically both sweet and savory, some consumers just straight-up want loaded fries in a dessert format. Datassential reports that funnel cake fries have grown 83% over the last four years, translating into 1% on dessert menus. Further, the report says, churro fries and beignet fries have grown 41% in the last year.5
For example, beignet fries are on menus in New Orleans, considered home of the beignet. <a href="https://www.pereantoinefrenchquarter.com/" target="_blank">Pere Antoine Restaurant</a> serves them two ways: beignet fries sprinkled with powdered sugar as well as Bananas Foster Beignet Fries (beignet fries with sliced bananas and topped with classic Foster sauce of dark brown sugar, banana liqueur and butter). They&rsquo;re served in similar fashion at another New Orleans staple, <a href="https://cafemaspero.com/" target="_blank">Caf&eacute; Maspero</a>, as well as at <a href="https://www.tastytailsseafood.com/" target="_blank">Tasty Tails</a>, in Dallas.
Globally influenced loaded fries appeal to masses
Something as easily versatile as loaded fries also gets international flavor across menus. For instance, according to Datassential:

<li>Thai fries have grown 144% in the last four years</li>
<li>Kimchi fries grew 95%</li>
<li>Mexican-influenced offerings like nacho fries grew 83% and carne asada fries grew 65%</li>
<li>Greek-inspired fries are up 55%, and an Italian spin on loaded spuds grew 49%.6</li>
</ul>
At <a href="https://eatatww.com/" target="_blank">Waterfront Warehouse</a>, in Kenosha, Wisconsin, Greek-, Mexican- and Thai-inspired loaded fries are offered on the menu. The Greek version is a hearty portion of waffle fries topped with homemade tzatziki sauce, imported Greek feta, Kalamata olives, organic Greek olive oil, chives, and oregano. Guests may add diced chicken or gyro meat for an additional fee. The Mexican choice is topped with chorizo, queso blanco, pickled jalape&ntilde;os, pico de gallo, chives and sour cream. And the Thai option consists of waffle fries topped with thick-cut pork belly, egg-up, roasted peanuts, scrambled egg, fig marmalade, chives, and drizzled with coconut curry and sriracha sauces.
Additional globally loaded fries recipes to watch are ramen fries, takis fries and sushi fries, which may come with wasabi aioli (gaining 5% in awareness).7

Chermoula (North African) &ndash; A fragrant, relish-like mixture of cumin, Spanish paprika, and turmeric, mixed with chopped onion, parsley, cilantro, lemon juice, garlic, and cayenne pepper, which can be used as a condiment or to season fish, chicken, and other proteins.
Chili Powder (American) &ndash; A spicy blend of chili peppers&mdash;mostly either ancho, cayenne, chipotle, New Mexico, and/or pasilla chilis&mdash;with cumin, oregano, garlic powder, salt, and sometimes black pepper, cinnamon, cloves, coriander, mace, nutmeg, or turmeric. Used in chili and other Tex-Mex/Southwestern dishes that need a kick of heat.
Chinese Five Spice &ndash; Used in Chinese red-cooked items and other specialties, such as five-spice chicken wings, this mixture contains star anise, clove, cinnamon, ginger, and anise.
Curry Powder (British, by way of India) &ndash; Though commonly associated with India, this blend of spices is seldom actually used there (see garam masala). It is nonetheless a delicious addition to everything from curries to chicken salad. A typical mixture includes coriander, turmeric, cumin, and fenugreek as well as such additional ingredients as ginger, garlic, fennel seed, cinnamon, clove, mustard seed, green cardamom, black cardamom, mace, nutmeg, and red pepper.
Fines Herbes (French) &ndash; A mildly flavored mixture of fresh parsley, chives, tarragon, and chervil, used in omelets and other subtle foods.
Garam Masala (Indian) &ndash; With as many possible combinations as there are cooks, this &ldquo;warm spice mixture&rdquo; takes many forms, depending upon its intended use. The basic mixture might include black and white peppercorns, cloves, bay leaves, chilis, black cumin, cumin seed, cinnamon, cardamom, nutmeg, mace, star anise, and coriander seed.
Herbes de Provence (French) &ndash; A Provencal mixture of dried herbs including thyme, bay leaf, rosemary, marjoram, basil, and sometimes lavender; great on roast chicken.
Jerk Seasoning (a.k.a. Jamaican jerk spice) &ndash; A fiery blend of allspice and Scotch bonnet chilis, as well as clove, cinnamon, nutmeg, thyme, and garlic; used to season chicken and other meats.
Montreal Steak Seasoning (American) &ndash; A robust blend for burgers, steaks, and other grilled meats; often includes cracked pepper, salt, paprika, onion, and garlic powder, coriander, and dill.
Old Bay Seasoning (American) &ndash; Included in many recipes for boiled seafood and crab cakes, this iconic regional seasoning mix includes celery salt, bay leaf, mustard seed, both black and red pepper, cinnamon, and ginger.
Ras el Hanout (Moroccan) &ndash; Literally &ldquo;top of the shop&rdquo; (as in spice shop), ras el hanout is an increasingly popular Moroccan spice blend that can contain more than 30 ingredients, but a &ldquo;streamlined&rdquo; version might include cumin, ginger, turmeric, cinnamon, coriander, cayenne, allspice, nutmeg, clove, and several types of pepper. Used as a rub for grilled meats or a seasoning in tagines and other mixtures.
Shichimi Togarashi (Japanese) &ndash; A seven-ingredient blend of coarse red chili pepper, sansho (similar to Sichuan pepper), orange peel, poppy and sesame seeds, hemp seeds, and nori or aonori seaweed, used to enliven Japanese noodle and soup dishes.
Vadouvan (Indian) &ndash; Used to season a variety of foods, this specialty spice mixture has recently been discovered by chefs; it usually is comprised of curry leaves, fenugreek, mustard seed, garlic, and sometimes cumin, and may also include garlic, shallots, or onion.
Za&rsquo;atar (Middle Eastern) &ndash; Great on flatbreads, in pilafs, and as a dried spice rub for kebabs and grilled meats; this spice mixture usually includes ground sumac (a lemony-flavored berry), dried thyme, oregano, and marjoram mixed with toasted sesame seeds.
